Beans and Rice with Fried Plantains GF DF

I love plantains. Especially fried. Especially fried in butter.

My friend Jess taught me the trick to successful plantain frying after MANY unsuccessful attempts. They have to have enough butter/oil/whathaveyou to swim a bit. No sticking to the pan!
Also. the plantains should be brown-spotted, but not black.

Ingredients

1 plantain for every two servings
1-2 tbs butter or earth balance
cumin
cinnamon
sea salt
1 bunch cilantro
rice
black beans
lime juice

Directions

Slice plantains about 1/2" thick. Heat butter or Earth Balance in cast iron (preferably) skillet over medium heat.
Once hot, add plantains, one piece at a time to make a single layer.
Watch for the sides to turn bright yellow, that's when it's time to flip them (2 min or so).
Once flipped, sprinkle with cumin, cinnamon, and sea salt.
Watch again for the yellow and remove from pan.
Serve over hot black beans and rice. Garnish with cilantro and lime juice.
