North of the Andes Sandwich DF GF

This is one of my all-time favorite sandwiches. Make it GF by using your favorite gluten-free bread.
This sandwich was inspired by the West of the Andes Sandwich at the Weary Traveler in Madison, WI. When I moved up here, I had to figure out a way to make these myself. This is what I came up with.
I recommend serving this with tortilla chips and greens with a spicy dressing. Enjoy!
Ingredients

1 large beet
1 large sweet potato
1-2 tbs olive oil
quartered artichoke hearts in water
1 avocado
bread of choice
1/2 tsp cumin
1/4 tsp chipotle
1/3 cup veganaise (or mayo)
juice of 1/2 lime
Directions
Chop the beet and sweet potato into 1/2" thick disks, then cut the disks in half. Toss with olive oil and spread onto cookie sheet. Bake for 30-40 minutes at 350.
While they're baking, mix up the spicy mayo. Combine the last 4 ingredients in a bowl or jar and mix well.
Once the beets and sweets are done, sprinkle with sea salt.
Lightly toast bread and spread with spicy mayo. Add 1/2 sliced avocado and 1 sliced artichoke heart quarter. Layer 3-5 pieces each of beet and sweet potato (depending on bread size and how much you can unhinge your jaw).
Put one slice of bread on top of the other slice of bread and you've got yourself a sandwich!
