Oatmeal Casserole- gluten free/can be dairy free
I didn't make this recipe for breakfast this week, hence the lack of picture, but there were requests, so you can imagine how beautiful it is for now.
This is a fantastic weekly breakfast dish- oats, fruit, protein from the eggs, yum! I like to serve it with maple syrup or applesauce on top.
This is a fantastic weekly breakfast dish- oats, fruit, protein from the eggs, yum! I like to serve it with maple syrup or applesauce on top.
Ingredients
1/3 cup oil (I use canola)
2/3 cup applesauce
1/2 cup brown sugar
4 eggs
3 cups milk of your choice (I use almond)
1 tsp salt
2 tbsp baking powder
6 cups quick oats
1 cup dried fruit (I use tart cherries or cranberries or a combination)
topping
2 tsp cinnamon
1/4 cup brown sugar
Mix oil, applesauce, and brown sugar in a big bowl. Beat in eggs. Add milk, salt, and baking powder, mix until baking powder is fully blended. Add oats and dried fruit. Pour into lightly greased 9x13 pan. Sprinkle with topping. Bake for 35 minutes at 350 degrees. Enjoy!
