Summer Tortellini Salad
The weather was much too nice to cook hot food for this week, but not warm enough only eat popsicles...
So we compromised with this delicious, super easy pasta salad!
approx 2 lbs tortellini uncooked (I used four 7 oz packages)
1 med/large head broccoli
2-3 cups baby spinach
1 bunch flat leaf parsley
8 oz asiago or cheese of your choice
1/2 cup raw pumpkin seeds
1 cup roasted salted sunflower seeds
2-3 Tbs balsamic vinegar
2-3 Tbs olive oil
Cook tortellini according to package instructions. Run under cool water until cold.
Floretize broccoli and steam just until tender-ish and run under cool water.
Cut cheese into 1/2" cubes.
Stir everything together.
