Tomato-Free Chili!
Think it sounds weird? You wouldn't be the only one.
I'm telling you, it's delicious. If you can't hang with this though, just put tomatoes in instead of the tasty, pinkish substitute.
I wish wish wish the untomato sauce were my idea, but alas it was not.
After the birth of our son, some super amazing people made us some crazy delicious food (you know who you are, superstars). One of them made us stuffed pasta shells with what looked (and tasted) like marinara sauce. Rocked my world! I hadn't had anything tomato-y for nearly ten years so really any red food would've fooled me, but my husband thought it was delicious too!
I grilled her on the ingredients she used and started experimenting.

Ingredients for Chili
1 cup dry kidney beans 1/2 cup dry black beans 1/2 cup dry garbanzo beans 2 cups untomato sauce 1/4 bunch celery 1 large yellow onion 3 toes garlic 1 tsp cumin 1 tsp ground chipotle peppers 1 tsp chili powder lots of water canola oil Ingredients for Untomato Sauce
1 large or 2 med beets 4 good-sized carrots 1 Tbs olive oil 1 Tbs apple cider vinegar 1/2 tsp salt 1-2 cups water (1 Tbs italian seasoning if making as marinara sauce) |
Directions for Chili
Put dry beans in a bowl or pot and cover with at least two inches of water. Let soak approx 8 hours. Rinse beans and put in slow cooker (again covered with water) and cook on low approx 8 more hours. At some point while preparing beans, make the untomato sauce. Heat oil in a big soup pot over med heat. Add onions, cook until they start to brown. Add garlic and celery. Once the celery starts getting bright green, add spices and stir for about 30 seconds. Add untomato sauce, beans, some reserved bean-cooking water, and other water to desired chunk liquid ratio. Bring to a boil and simmer for 15-30 minutes. I like to serve this with grated cheddar cheese and plain greek yogurt and macaroni (which my husband thinks is an abomination) Directions for Untomato Sauce Wash and trim carrots and beets. Quarter the beet(s) and half the carrots width-wise. Roast veggies at 350 for about an hour or until you can stick a fork in them. Toss veggies and rest of ingredients in food processor and blend until it looks like marinara sauce. I make this in batches at least 3 times this size. Then I can change the seasonings in each food processor batch for various dishes (cumin in one, italian seasoning in another, etc). |
